Lunch Box Ideas – #1

 Lunch box contents : Sesame Fried rice ( Brown Rice) with Orange Shrimp & Broccoli , Simple Apple cider sesame salad and sweet honey yoghurt. Berries and nuts for snacking.


1)RECIPE : Sesame Fried rice ( Brown Rice) with Orange Shrimp & Broccoli

SERVES : 1                       COOKING TIME : 15 MINS

For rice:

  • Brown rice (cooked) – 500 grams
  • Sesame seeds
  • 2 pods of garlic (chopped)
  • Sesame oil
  • salt and pepper

For the Shrimp:

  • Shrimp (cleaned and marinated with salt, a little bit of chilli powder & pepper) – a few pieces 
  • 1  cup orange juice
  • 2 pods of garlic (chopped)
  • 2 tbsp soy sauce
  • 1 tbsp water
  • canola oil
  • 1 tbsp sugar
  • 1 tbsp corn starch
  • salt and pepper to taste

PREPARATION:

  1. To prepare the rice , add 2 tbsp of sesame oil to a wok. Add a heapful of  sesame seeds and toast them in the oil. Add the chopped garlic and stir. To this add the rice , salt and pepper and mix nicely. You can add a little more oil to coat the rice well. cook for 5 mins , remove from heat and top it off with some more sesame seeds.
  2. To prepare the orange shrimp which compliments the sesame rice well , you will need to add 2 tbsp of canola oil to a pan and add the chopped garlic. Then fry the marinated shrimp and broccoli in it. .Add salt and pepper and keep it aside to prepare the sauce . To make the sauce , add the soy sauce , orange juice , and sugar. Bring it to a boil. when it starts to turn syrupy , add the cornstarch mixed with the water. Remove from heat once it thickens top it off with chopped spring onion leaves.


2) RECIPE: Simple Apple cider sesame salad and sweet honey yoghurt


SERVES: 1      PREPARATION TIME: 10 mins

For salad:

  • Apple cider vinegar – 1 tbsp
  • Olive oil – 1 tbsp
  • chilli flakes – 2 tsp
  • chopped cucumber and carrot – half each
  • toasted sesame seeds – 1 tsp
  • salt and pepper

For yoghurt:

  • low fat yoghurt – 1/2 cup
  • honey 

PREPARATION:

  1. To prepare the salad , add all the ingredients together and whisk. add salt and pepper to taste.
  2. To prepare the yoghurt , mix all the ingredients.

 

3) SNACKS :


To prepare the snacks, just add an assortment of berries and nuts preferrably walnuts and almonds to the lunchbox. I like to drizzle them with honey.

And thats it ! You’ve prepared a complete healthy and tasty meal in no time. The recipes mentioned here are tried and tested for lunch and make a complete meal. They are very simple and easy to prepare !
