BUT WHY FLAXSEED ?
Flaxseed is gluten-free ,high in fibre ,low carbs, high in antioxidants and omega 3 fatty acid. And thats only half of its nutrients. It helps in lowering your chlolestrol , aids in weight loss , and it is great for your hair and skin (they contain B vitamins)! It is also the easiest way to detox as they pull gunk out of your bowels , sounds disgusting but your body loves it !
To be honest ,the whole reason I made these cookies is not because its healthy or anything. One of my closest friends had recently given birth and I wanted to make something that would give a new mother energy and help with lactating. Yes lactating ! So while I was researching on the ideal foods for new moms , I came up with the idea of putting all the best ingredients into cookie form. So that’s how this recipe came up.
So this recipe contains Flaxseed , ground almond , coconut oil , and oats. I added chocolate chips but you can skip it or substitute it with some chopped dates or raisins. Also to increase the richness of the cookies i added butter which can be substituted with coconut oil to make it vegan- friendly !

RECIPE : FLAXSEED OATS CHOCO CHIP COOKIES
MAKES: 20 Cookies
PREP TIME: 10 Mins, COOKING TIME: 10 – 15 Mins
You will need:
- 1 cups of all purpose flour / wheat flour
- 100 grams or half block of butter
- 1 1/2 cup old fashioned rolled oats
- 1 large egg
- 3 tablespoons of flaxseed ( any kind) ground finely
- 1/4 cup of almond meal
- 1 teaspoon vanilla extract
- 2 tablespoons pure coconut oil
- 1 cup choco chips
- 1 cup brown sugar
- 1/8 teaspoon salt
- 1/4 teaspoon baking powder and baking soda
Cream the sugar, egg and butter together.
Grind the flaxseeds until its a fine powder.
Mix the oats , flaxseed meal and almond meal with the butter and sugar.
Sift the flour , salt ,baking powder and baking soda and keep aside.
Mix the flour mixture to the wet ingredients. Add the vanilla extract ,choco chips and mix nicely. Make sure you add the chips towards the end.
Divide the cookie into little rolls and press them into cookies. Bake them for 10 – 15 mins until golden.
Enjoy your cookies for breakfast or snack on them at any time of the day ! They are absolutely delicious and contains loads of energy superfoods.
