Pav Bhaji – Spicy veg curry with buttered buns ( Roadside Recipes )

Apologies for the rather lengthy post. This recipe is rather easy to make and tastes absolutely delicious. I remember I was 7, the first time I had pav bhaji in a mall in Abu Dhabi. I was immediately in love and that mall would soon become my favorite just so I could get a taste of that delicious goodness again! My mom would happily oblige to my requests but I know now that secretly she loved it too. This is definitely one of my favorite memories with my mom. We shared our worries and happiness over a plate of steaming hot pav bhaji, it could not get better. Alas! Life got in the way I got a baby brother and we moved to Dubai, after my grade 10 and things just got too busy. My mom and I no more shared our life and secrets with each other. Though we are still close and do talk a lot, there’s no more that special “innocent” bond anymore! I guess that’s what growing up does, I know I will never be able to get back what we lost but to relive it …that’s something I can.

After a long time this weekend, we sat down over a plate of “good” hot pav bhaji just like old times. Of course we’ve had pav bhaji outside before but sitting down in this beautiful weather, laughing and making fun of each other was something else. And that’s what got me to recreate that moment again … just so I can share that moment with my mom one more time! I guess this is the most personal I’ve ever gotten with my blogs. I hope this recipe brings loved ones together for all of you! Food is a way of connecting with people. There is always a story behind a dish. I hope you like my story and my dish.

RECIPE: PAV WITH SPICY VEGETABLE CURRY

PREP TIME: 30 MINS

COOKING TIME: 30 MINS

BUNS:

Makes 12 buns

  • 3 cups (375 grams) all-purpose flour
  • 1/2 cup of  warm milk
  • 20 grams of butter plus 2 tablespoons of cooking oil
  • 1 ½ tsps. Of salt
  • 1 tsp of baking powder

For proofing the yeast:

  • 1 packet of active dried yeast (11 grams)
  • ½ cup plus 3 teaspoons of warm milk
  • 4 tsps. of water
  • 3 tsps. sugar

 SPICY CURRY:

  • 2 potatoes ( one big and one small)
  • 2 medium sized tomatoes
  • 3 green chillis
  • 1 dried red chilli (broken)
  • 3 medium sized onions (one keep aside chopped for garnishing)
  • 1 carrot
  • 1 tsp ginger garlic paste
  • 1 tsp turmeric
  • 2 tablespoons chilli powder ( I added 3 for extra spice)
  • 2 tsps. coriander powder
  • 1 tsp cumin powder
  • 1/2 lemon juice 
  • 1 cup coriander leaves
  • A heapful of mint leaves
  • Salt to taste
  • Water to adjust consistency

 PICTORIAL:

Preheat oven at 180 and proof your yeast. Add the warm milk , water , sugar and yeast together and allow it to proof for 5-10 mins.

It should look as above. If your yeast dosent proof after 10 mins , throw it out and start again. This step ensures a soft bun ! 

Mix all the dry ingredients for the bun and add in the butter. Add the milk and proofed yeast mixture and mix nicely until to get a nice dough.

Allow the dough to rise for 15-20 mins. Meanwhile you can start on the curry. 

Once the dough rises double it size , divide it into equal balls as you can see in the picture. I haven’t done a good job but you can roll it out smoothly and place it in a greased pan. I used a pyrex dish and greased it with olive oil.  Slightly butter the tops of the buns and bake it for 15 mins. After 15 mins , take it out and give it a egg wash for a beautiful golden colour on the top. Leave it in for 10 more mins and your buns are ready.

Add oil to the pan and the chopped onions . You can add a little salt to get it to cook faster.Add ginger garlic paste and cook for 5 mins.

Add in the chopped tomatoes, turmeric and chilli powder. Cook until oil separates on the sides of the pan. 

Add the chopped carrots , potatoes , green chillis and dries chilli. You can also add a little water at this stage to cook the vegetables. You can add more vegetables if you want but this is the most simplest and tasty way to do it. Peas go really well in this. I dint have any at home. Add salt to taste. Close the lid and allow it to cook for 15 mins. 

Once the vegetables are cooked well , add 3 tablespoons of butter and mix well.

Add lemon juice. Be mindful to add the lemon juice only after the vegetables cook or else they wont cook soon. Garnish with coriander leaves and mint leaves. Also add in the chopped onions we kept aside ! And your curry is done. 


Serve it hot hot with the buns ! I hope it brings a warm feeling in you as it did for me !
