If you are anything like me and not been eating healthy your entire life but you want to change now before its too late, then you would understand how difficult it is to get in on a healthy routine . Finding healthy alternatives is soo sooo difficult. Some people make it look so easy with so and so diets but what works for them might not work for you. So its really difficult to come to a conclusion with what works for you and your lifestyle.
Im the sort of person who will eat healthy as long its yummy. Complicated.I can’t eat something just because its healthy, it needs to satisfy my taste buds!! And soo , most healthy recipes online seem pretty extreme to me, like how can you even eat that. I simply wont eat something , no matter how convincing or life changing it could be. Hence I’m always on the lookout for healthy recipes , sometimes coming up with it on my own or making changes to some recipe I found online.
This recipe uses Quinoa as the main ingredient. The main reason I think quinoa is so good for you is because it tastes just like rice and its so fillling minus all that gluten that rice has. From where I come from , rice is a staple food. There is rice in most of the dishes we prepare so finding an alternative was important.There are rices , like the brown rice and other varieties which do not contain. Gluten but you can’t use them to make most dishes. I do not have any problems with consuming gluten but I try my best to avoid it due to the role it plays in messing up your skin.
Why avoiding Gluten can be the answer to your skin problems ?
Poor skin is can be due to a bad skin care routine or due to underlying problems within the body. Yes , what you eat does affect your skin and no it is not a myth. Gluten is linked to causing skin problems such as spots on the forehead , cheeks and chin ,puffy and swollen cheeks , and mostly hyperpigmentation around the chin area. Gluten should be avoided if you struggle with acne , as it makes your gut more permeable , allowing it to pass through certain protiens into the bloodstream which would have been otherwise eliminated as waste.This causes inflammation leading to acne.
As a biotechnoligist , I totally understand this. There is this insulin like growth factor that gets affected ( IGF-1 ) causing your blood sugar to rise to cause acne and yada yada. If I begin telling you about gluten that would be an all new post altogether so lets not get into the details but what Im trying to say is , what you put into your body affects how you feel and look. Its about time I share the recipe , I guess i’ve said enough.

RECIPE: QUINOA SALAD
Cooking time: 20 mins
- 1 cup of Organic quinoa (any variety)
- veggies of your choice ( I used broccoli , carrots , chickpeas , cucumbers , potatoes and green peas) You can add how much ever you want.
- 1 garlic pod
- Half onion ( diced)
- Olive oil
- 1/4 teaspoon turmeric powder
- Chilli powder to taste
- salt to taste
1) Cook the quinoa and set it aside. I added a few mushrooms to enhance the taste. You can add the salt at this stage.
2) In a pan , add about 2 teaspoons of olive oil and add the onion and garlic to it. Saute until golden , be mindful not to burn it.
3) Add the turmeric powder (1/4 teaspoon) and the chilli powder according to your preference. I like it a little spicy.
4) Add the vegetables ( leaving the cucumbers for later) and mix them with the spices. Add a little bit of water to cook the veggies. Turn down the flame to medium and allow it to cook for a few minutes.
